Potato Chip Cookies
1 cup shortening
1 cup white sugar
1 cup brown sugar
2 eggs
2 ½ cups flour
1 tsp vanilla
1 tsp baking soda
Dash salt
1 cup (6 oz bag) butterscotch chips
2 cups potato chips, crushed
Cream shortening and sugar; beat in eggs. Sift flour and soda together and add the rest of the ingredients. Drop by teaspoon onto cookie sheet. Bake at 375 degrees for 10-12 minutes.
Makes 7 dozen.
Notes: 12 minutes. One 10 ½ oz bag of potato chips should yield enough crushed potato chips for a double batch.
