Pecan Crispies
1 cup butter or margarine (2 sticks)
2 ½ cups brown sugar
2 well beaten eggs
2 ½ cups flour
¼ tsp salt
½ tsp baking soda
1 cup chopped pecans
1 pkg (6 oz-or 1 cup) butterscotch chips
Cream butter and sugar. Add eggs and beat well. Add sifted dry ingredients then chips and nuts. Drop by teaspoonfuls about 2 inches apart onto greased cookie sheet. Bake @ 350 degrees for 14 minutes
Makes about 8 dozen
Notes: Also good without butterscotch chips. If doubling a recipe, a 2 lb bag of brown sugar equals 5 cups.
